Balsamic-Roasted Cherry Tomatoes

These are also great spooned over fish, chicken or even pasta. Can also be topped with chiffonade cut fresh basil.


  • 2 lb cherry tomatoes
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Kosher salt
  • Freshly ground black pepper


Step 1

Preheat the oven to 375°F. Toss together the tomatoes, garlic, vinegar, and olive oil on a large rimmed baking sheet.

Step 2

Season with salt and pepper. Roast for 20 to 25 minutes, until the tomatoes are tender and just begin to burst.
