I have listed the ingredients in range amounts since I really just eye everything when measuring, just use your own judgement.

*Gigi Taco Seasoning
*Roasted Chick Peas


  • 1-2 Tbls. olive oil
  • 1 lb. ground bison, sesaon with salt and pepper while cooking
  • 1/4 - 1/2 onion, chopped
  • 1-2 cloves garlic, minced
  • *1-2 Tbls. Gigi Taco Seasoning, (or your favorite store brand)
  • 1/2 c. water
  • salsa to taste
  • monterey jack/cheddar cheese
  • 1 avocado, sliced then add lemon juice, salt and pepper
  • 1 tomato, cut into small chunks
  • pumpkin seeds
  • 1/2 pkg. Chopped Salad Kit (any variety) tossed in lemon or vinegar and oil dressing with salt and pepper
  • *roasted chick peas


Step 1

Heat olive oil in skillet then cook bison with sauteed onions and garlic. I usually start the bison cooking then before it is completely browned I move it to one side of skillet and saute the onions and garlic. Once the onions/garlic is translucent I will mix the bison back in to finish the cooking.
