Caprese Panini

This recipe began with a Caprese Salad recipe from the Pioneer Woman website. I decided it would go from a fantastic appetizer to a great light meal if you took the salad up a notch and made a panini out of it. Wow, great call.


  • 2 "1/4 inch" slices of fresh mozarella (I used
  • 2 "1/4 inch" slices garden fresh tomatoes, organic
  • 2 leaves fresh, large basil leaves, more if you really like fresh basil
  • salt and pepper to taste
  • 1 T. organic butter
  • 2 slices whole grain wheat bread, slightly toasted
