This recipe began with a Caprese Salad recipe from the Pioneer Woman website. I decided it would go from a fantastic appetizer to a great light meal if you took the salad up a notch and made a panini out of it. Wow, great call.
- 2 "1/4 inch" slices of fresh mozarella (I used
- 2 "1/4 inch" slices garden fresh tomatoes, organic
- 2 leaves fresh, large basil leaves, more if you really like fresh basil
- salt and pepper to taste
- 1 T. organic butter
- 2 slices whole grain wheat bread, slightly toasted
