This method takes the guess work out of how long do you boil an egg.
Preheat oven to 325 degrees.
Place eggs in a muffin pan. This works best if you use a 24-cup mini muffin pan so the eggs will stand up on end. If you use a regular size one, the eggs will lay on their side and may have a little brown spot on the part of the egg that touched the hot surface of the pan while baking. No biggy though, I just peel that part off when taking the shell off.
Bake eggs for 30 minutes. Remove eggs from muffin pan with tongs and immediately place in a bowl of ice water for 10 minutes. This stops the cooking process and causes the yolk to retain a bright yellow color throughout.
If you want to use the eggs immediately or later that same day, go ahead and peel them and use or place in frig. This is when they will peel the easiest. If you plan to use them later in the week, place them in the frig unpeeled and peel when ready to use. Cooked eggs should last from 5-7 days in the frig.
