Fajita Grilled Vegetables

  • 1 yellow bell pepper and/or orange, red or green bell pepper, as per your preference
  • 1/2 onion, slice in 1/2" slices then halved again
  • extra virgin olive oil
  • white rice vinegar
  • Spicy Chipotle Rub, Williams-Sonoma
  • salt and pepper


Step 1

Wash and cut up vegetables. Place in bowl and drizzle with oil and vinegar about a 4:1 ratio.

Step 2

Sprinkle with Williams-Sonoma Spicy Chipotle Rub and salt and pepper. Stir and let marinate for at least 20 minutes.

Step 3

Grill for about 10-15 minutes in a foil lined, wire grill pan or on skewers. Can be quickly sauteed in a pan with cooked slice fajita meat right before serving. Serve with fajitas.
