Fried Plantains and Berries

Fried plantains are delicious if you start with the right fruit. When buying plantains remember the outside needs to be almost totally black in order to attain the right amount of sweetness. If you buy them when they are yellow, let them ripen on your kitchen counter for several days.


  • 1 large plantain, bright yellow with black spots to mostly black
  • 2-3 tsp. safflower oil
  • dash of cinnamon
  • 1/2 - 1 T. butter
  • raw sugar
  • fresh berries
  • *Optional 100% maple syrup


Step 1

Let plantain ripen for at least a couple days after you buy it if not fully ripened; until it almost seems overripe. Peel and slice plantains in thin strips.

Step 2

Heat oil in a skillet over medium heat, add plantains,sprinkle with cinnamon and saute on both sides. When plantains start browning add a little butter for flavor and continue cooking until they are golden brown and have a crispy coating. Sprinkle with raw sugar; not much because the plantains are already sweet when fully ripened.

Step 3

Plate and top with blueberries, blackberries or raspberries.

Step 4

*Optional you can drizzle 100% maple syrup over the plantains for added flavor.
