Green Beans with Lemon and Garlic2014-01-28

I eat fresh green beans all the time and the taste of these are accentuated by the light lemon flavor; something to spice them up a bit.
- 1 lb. fresh green beans, ends trimmed (I used frozen thin cut)
- 1/2 T. extra virgin olive oil
- 1 1/2 T. butter
- 1 clove garlic, minced
- 1/2 tsp. red pepper flakes
- 1/2 T. lemon zest
- salt and freshly ground pepper to taste
Blanch green beans in a pot of salted boiling water until bright green and tender crisp, about 2-3 minutes. Drain. If you like your beans a bit crisp then after blanching, throw them in a bowl of ice water to stop them from continuing to cook, otherwise just set them aside after draining.
Begin to heat a skillet over medium heat, add oil and butter to melt.
Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add beans and continue to saute until coated in the butter and heated through, about 5 minutes. (I don't like my beans crispy at all, so at this point I saute them until they are soft.)
Transfer to serving bowl and top with lemon zest, salt and pepper.
