OK I love carrots! It doesn’t matter-cooked not cooked, toppings or plain; they are delicious. I concocted this very simple way to prepare them. Try it, you will not be disappointed.
- 1 bunch thin, organic carrots
- 1-2 T. Extra Virgin Olive Oil
- 1-2 T. organic butter
Peel and wash carrots leaving ends and 1/2 inch of tops. Pat dry and brush liberally with oil.
Place on grill with oiled grates. Grill over low heat until tender for about 20-25 minutes, turning a couple of times during cooking. Test with fork, should be tender but not soft with nice grill marks.
Plate and top immediately with butter, cover to allow butter to melt. Serve immediately.
