This is a very simple dish, but the butter makes it with the perfect blend of spices. This butter also works great in mashed potatoes.
- 3 medium organic red potatoes
- sea salt and fresh ground pepper
- 2-3 T. Kerrygold Garlic and Herb butter
Scrub potatoes really good and leave skins on. Cut into large chunks. Boil in salted water for 20 minutes or until tender but not mushy.
Drain well and place back in pot. Top with garlic and herb butter, sprinkle with salt and pepper to your taste and toss lightly. Try not to mush up potatoes too much. Serve.
