Kale Chips

These are also great as topping for Tomato Basil Soup instead or even in addition to croutons.


  • 1 bunch of fresh kale, washed
  • olive oil
  • curry powder
  • garlic powder
  • salt
  • cayenne pepper


Step 1

Preheat oven to 200-250 degrees depending on your oven.

Step 2

Wash kale and break into small pieces removing the stalk and stem. Tear up into pieces about 2-3 inches round. Set aside on towel to mostly dry.

Step 3

Place kale in big bowl and lightly drizzle with olive oil. Mix together until pieces are slightly coated with oil and then transfer until baking sheet in a single layer.

Step 4

Sprinkle lightly with spices and place in over for 40-55 minutes. Continue to test for crunchiness and not burning after 40 minutes. If not getting crunchy at 200 degrees for 40 minutes, adjust the oven temperature to 250 for an additional 5-10 minutes.

Step 5

Remove and serve. If not spicy enough, additional spices can be added after cooking.

Kale is very high in beta carotene, vitamin K, vitamin C, and rich in calcium.
