Nut Crusted Baked Chicken

Revised recipe from “The Gracious Pantry” They are fantastic and tastes just as good the next day. I served them with Warm Warm Honey Mustard Vinaigrette.


  • 3-4 medium chicken breasts
  • 2 egg whites, whisked or 1 whole egg, whisked
  • 1/2 cup pecan halves
  • 1/2 cup whole almonds
  • 1/2 cup parmesan cheese
  • 2 tsp. Ziziki's Seasoning (*see note)
  • 1/2 - 1 tsp. Sea Salt (adjust to preference)
  • Cracked Black Pepper


Step 1

Preheat oven to 350 degrees F.

Step 2

Pound chicken breasts to flattened a bit so they will cook evenly.

Step 3

Add all ingredients, except chicken and egg, to the food processor. Blend together until you have a nice crumbly mixture (will be slightly wet)

Step 4

Set up your assembly line so that everything is on it's own plate. Put chicken on one plate, egg on another, and nut mixture on yet another so you can just grab your chicken, dip it in the egg and then roll in nut mixture. You may have to press mixture to the chicken to make sure it is covered well.

Step 5

Place coated chicken on a parchment paper lined baking sheet. Sprinkle with cracked black pepper.

Step 6

Place in oven until the chicken reaches 160 degrees F. About 30-35 minutes.

*Ziziki's is a wonderful Greek restaurant in Dallas Texas. They sell their famous spice mixture for a mere pittance and it is wonderful on everything. It contains: Greek oregano, garlic, salt and pepper.
