Quick Clean Spaghetti2013-02-27

- 1 lb. ground buffalo meat
- 1 (25 oz) jar Trader Joe's Organic Tomato Basil Marinara
- 1 pkg. whole wheat spaghetti noodles
- 1 T. butter
- salt and pepper to taste
- *optional ingredients 1/2 c. red wine divided, olive oil
Brown buffalo in skillet. Add salt and pepper. Add 1 T. olive oil if meat begins to stick to pan. *While meat is browning you can add 1/4 c. of red wine to add depth to the flavor.
Cook spaghetti noodles as per directions on package.
Once meat is browned, drain any excess oil off. (If using high quality buffalo, this really shouldn't be necessary) Add Marinara Sauce and let simmer for about 15 minutes. *While sauce is simmering you can an extra 1/4 c. red wine if desired.
Drain pasta when cooked and then toss with butter to prevent sticking together. Top spaghetti with sauce and serve.
