This is a refreshing drink that uses raw sugar instead of the traditional superfine white sugar to keep it in the clean eating realm.

  • 8-12 fresh mint leaves (depending on how large the mint leaves are)
  • 1 T. freshly squeezed lime juice (you must use fresh squeezed lime juice)
  • 1 1/2 tsp. raw sugar
  • 3 T. white rum
  • 2-3 ounces sparkling water
  • 4-6 fresh raspberries

Step 1

Put mint leaves, lime juice and sugar in a tall glass: stir until sugar is dissolved. (This may take a least 15-20 seconds since raw sugar dissolves slowly.) Using the straight end of a wooden spoon, gently press on leaves to release flavor; this is referred to as muddled mint or fruit. You can also do this with a muddler if you have one.

Step 2

Fill glass with ice cubes and pour in rum. Top off with sparkling water and raspberries.
