This is a refreshing drink that uses raw sugar instead of the traditional superfine white sugar to keep it in the clean eating realm.
- 8-12 fresh mint leaves (depending on how large the mint leaves are)
- 1 T. freshly squeezed lime juice (you must use fresh squeezed lime juice)
- 1 1/2 tsp. raw sugar
- 3 T. white rum
- 2-3 ounces sparkling water
- 4-6 fresh raspberries
Put mint leaves, lime juice and sugar in a tall glass: stir until sugar is dissolved. (This may take a least 15-20 seconds since raw sugar dissolves slowly.) Using the straight end of a wooden spoon, gently press on leaves to release flavor; this is referred to as muddled mint or fruit. You can also do this with a muddler if you have one.
Fill glass with ice cubes and pour in rum. Top off with sparkling water and raspberries.
