Shredded Chicken in the Crock Pot2013-03-05

I usually get this started on Sunday when I am making something else for dinner. After it is cooked, you can refrigerate and use in the week for other dishes (great time saver). The strained broth is good to use for gravies and in other recipes.
- 3-4 boneless, skinless organic chicken breasts
- 1 32oz. carton of organic chicken broth
- 2 stalks organic celery with leaves, chopped in 3" pieces
- 1/3 medium onion, chopped in large chunks
- 2 cloves garlic, minced
- fresh ground black pepper
Chop rinsed stalks of celery including the leaves. Cut 1/3 of an medium onion into large chunks and place with celery and garlic in crock pot.
Put chicken breasts in crock pot and pour organic chicken broth over them until it covers the chicken and vegies. Add some fresh ground black pepper.
Cover the crock pot and cook on high 3 hours. Check mixture and add more chicken broth if needed. The chicken should be cooked enough at this point to cook the last 1 hour on medium.
Remove from crock pot and set aside to cook slightly. As soon as chicken is cool enough to touch, shred into small pieces with forks.
