Spaghetti Squash Au Gratin

This dish if very adjustable. Ingredient amounts can vary depending on your personal preference. Also, you can cut down on the calories by using low-fat sour cream and cheese; plus saute the onions in less butter or olive oil.


  • 1 medium spaghetti squash
  • 2 T. butter
  • 1/2-3/4 small yellow onion, cut in half and very thinly (base amount on how much you like onions)
  • ¼ tsp. red pepper flakes, or more if you like it spicy
  • 1 tsp. fresh thyme or 1/2 tsp. dried thyme
  • ½ cup sour cream
  • ½ cup shredded cheddar cheese


Step 1

Cut the spaghetti squash in half and remove the seeds. Place in a covered dish with a ¼ inch of water and microwave for 10 -12 minutes.

Step 2

In a medium sized skillet over medium heat, add the butter, onions, red pepper and most of the thyme and cook until the onions are slightly brown in color. Salt and pepper to taste.

Step 3

Using a fork, scrape the insides of the squash and transfer to a small bowl. Combine the squash, onions, sour cream and half the cheese together and mix well.

Step 4

Transfer the mixture to a buttered baking dish and top with remaining cheese and sprinkle the remaining thyme over the top. Place into a 375º for 15 – 20 minutes until golden brown on top.
