Spinach Omelette

This is a clean out the frig type recipe. I always have eggs and as in this recipe have resorted to using Babybel cheese when that was all that was left in the frig. It melts great and the taste is so creamy. Try this with any veggies you have in the frig and/or Canadian bacon or even real bacon for that matter.


  • 5-6 farm eggs, beaten
  • 2 T. low-fat organic milk
  • dash of sea salt and cracked pepper
  • fresh spinach leaves, wilted
  • mild creamy white cheese (I used Babybel, Swiss or Monterray Jack would also work)
  • smoked turkey sandwich meat, Chemical-free
  • 1 tsp. olive oil (Colavita)
  • 1 tsp. butter


Step 1

Put oil and butter in saute pan to melt. Mix eggs, milk, salt and pepper in small bowl. Add egg mixture to pan then add spinach over entire surface. Add cheese and turkey to only half of the omelette, (this will make it easier to fold over). Cook on medium low and continue to let runny egg slide to outside to cook or continue to cut holes in egg mixture to allow runny egg to run under the eggs.

Step 2

Once bottom is golden brown fold over side with no meat. Take off heat, but let sit in pan for a few minutes to firm up. Top with extra cheese and/or tomatoes.

Step 3

*Served with fresh fruit: mangos, bananas, bing cherries drizzled with lemon juice and honey.
