TK’s Fajitas

This recipe if from my dear friend TK. This recipe is one of the best you will ever use.


  • 1- 1 1/2 lb. chicken tenders or beef skirt or flank steak
  • 1/2 c. teriyaki sauce
  • 2 t. Colgin Liquid Smoke
  • 2 T. fresh lime or lemon juice
  • 4-6 flour tortillas (white tastes better, whole wheat is healthier)
  • *Optional toppings: grated cheese, sliced avocado or guacamole, pinto or black beans, grilled onions, green, yellow or orange peppers and sour cream with salsa mixed in.


Step 1

Place meat (chicken tenders or beef skirt stea) in a large zip-lock bag, sprinkle liberally with "Fiesta" Fajita Seasoniing. Pour in the rest of the ingredients and place in refrigerator.

Step 2

Marinade at least for several hours or overnight.

Step 3

Place meat on hot grill and sprinkle again with the Fiesta Fajita Seasoning. Grill until done and serve with any or all of the additional toppings listed above. Can also be served with Frijoles a la Charra

Step 4

*Beef fajitas are normally made with skirt steak which is not a very tender or lean beef. You can use better cuts of meat, just always remember to slice thin and across the grain when preparing to serve.
